As it s Pancake Day, PJ and I could not possibly miss out on having some pancakes for lunch today. As we both try to eat healthy we went for a better option - banana pancakes. If you think that they are difficult to make, you couldn't be more wrong. Just mash up a banana and two eggs in a bowl (per person). Add some cinnamon or vanilla and then fry on a tiny bit of coconut oil. When it comes to toppings, it's up to you. We went for peanut butter, almond butter, strawberries and some more nuts. But try having them with blueberries, cream or maple syrup. Simply delicious! Enjoy your Pancake Day!
